<p><em>This piece, presented by my granddaughter during a time when South Africa&#8217;s challenges with load-shedding have resumed, is timely. Inspired by her concern for keeping up with erratic blackouts it also helps to know how to keep food as fresh as possible.</em></p>
<h2><span style="font-size: 14pt;"><span style="color: #00ffff;">Why</span> does an  air-tight container keep food<span style="color: #00ffff;"> fresh?</span></span></h2>
<p><span style="color: #00ffff;">Some</span> food stuffs are spoiled by their own enzymes and many are attacked by the oxygen in the<span style="color: #00ffff;"> air</span>. Oxygen commonly reacts with fats causing the <span style="color: #00ffff;">rancid</span> taste and smell of<span style="color: #00ffff;"> stale </span>fats and oils. <span style="color: #00ffff;">An</span> air-tight container helps to preserve food by preventing oxygen from reaching the food, except for the little air left in the container , which will do no <span style="color: #00ffff;">harm</span>.</p>
