This piece, presented by my granddaughter during a time when South Africa’s challenges with load-shedding have resumed, is timely. Inspired by her concern for keeping up with erratic blackouts it also helps to know how to keep food as fresh as possible.
Why does an air-tight container keep food fresh?
Some food stuffs are spoiled by their own enzymes and many are attacked by the oxygen in the air. Oxygen commonly reacts with fats causing the rancid taste and smell of stale fats and oils. An air-tight container helps to preserve food by preventing oxygen from reaching the food, except for the little air left in the container , which will do no harm.
